Easy Mango Salsa with Coriander

The bright yellow Mango Summer Salsa is a perfect side dish for your meal. Fresh coriander and chill produce a healthy kick, balanced by the sweetness of mango.

Ingredients

 

2 ripe mangoes

1 small red onion, finely chopped

1 small fresh red chilli, halved, deseeded, finely chopped

5 gr fresh coriander leaves

1 tbsp extra virgin olive oil

1 tbsp fresh lime juice

Salt and pepper

Preparation

Spice up your next barbecue with this savoury, delicious coriander and chilli salsa. You can either serve it with pan-fried or chargrilled chicken, pork or fish for a light, fresh summer meal.

Steps

1.  Peel the skin of the mango and chop the flesh into 1cm pieces

2. Combine the mango, onion, chilli, coriander, olive oil and lime juice in a small bowl. Season with salt and pepper.
